I just roasted some pumpkins last week.. it was my first time doing it too! Really easy tho' and out of 4 nice pie pumpkins I got 8 cups mashed pumpkin for pies, etc.. ;) Great to have for the freezer. I LOVE Pumpkin Pie... now to just make some.. :)
